OP, if you can afford to get 16GB of RAM, you should. But mostly because it will future-proof you machine better. However if not, 8GB will still serve you well, and you’ll be able to do any kind of software development you can think of. A potato is possibly enough for web and Swift development.
Macbooks are great laptops, and I am a Windows fanboy. I purposely purchased a used 2015 macbook pro (because I hate the butterfly keyboard) and it is wonderful. Also, if you are gaming, then no laptop would be sufficient anyway, so you may as well stick with a mac for programming. Its better built and no trackpad can match.
Of course, if you never close any programs at all, or use very high RAM usage things like Docker, 8GB is not enough .
